Quick dinner, please!

Tofu and asparagus with black bean garlic sauce

Cook time: 10min

Prep time: 5min

Yield: 3-4 servings

1 (14-ounce) package extra-firm tofu

12 ounces asparagus spears, cut at an angle into 2-inch lengths 1½ tablespoons Chinese black bean garlic sauce

1 tablespoon extra-virgin olive oil

3 cups cooked rice, for serving

Equipment: Instant Pot or an oven

1. Pat the tofu dry with paper towels, then cut it into bite-size cubes.

2. Add the asparagus, black bean sauce, and olive oil to a large mixing bowl. Toss to coat the asparagus. Add the tofu and gently toss until it is coated as well.

3. Preheat the air fryer on BAKE at 200°C and set the cooking time for 10 minutes. If using a toaster oven-style air fryer, line the cooking pan with parchment.

4. Spread out the tofu and asparagus in an even layer on the lined cooking pan or, if using a basket-style air fryer, in the air frying basket.

5. Bake in the preheated air fryer.

6. When the cooking program ends, transfer the tofu and asparagus to serving plates or bowls. Serve right away with rice.
